About le petit lapin
When I embarked on this curious culinary quest in Paris, nothing prepared me for that one class in week two which involved dissecting a lapin, which would later be delicately prepared with love and served on the dinner-table. To me, Lapins are a breed of cute fluffy mammals best kept as domestic pets only. To some others they are a culinary delight. Gouging out fish eye-balls and searing twitchy live crabs I could handle... but hacking away at the lapin's brittle bones and paws was a hare-raising experience to say the least.
